Convivium in Latin means “feast” or “joyous sharing of food”. The slow, joyous, sharing of fresh food, good conversation and of stories is man's oldest, most cherished ritual. |
The Convivium Romanum is an ancient tradition at RVS. It began in the second century A.D. in the ancient villa of the Roman patrician couple, depicted on the sarcophagus. It was continued in the thirties by a group of artists – referring to themselves informally by that same name, Convivium Romanum - who came to paint, eat, drink and talk about art.
Today, we continue the tradition with slow food and wine, slow conversation and storytelling, and in the sharing of ideas in a very informal, unstructured way.
When we eat together, we select the best seasonal foods. The good name of Italian cookery rests upon high quality ingredients - fresh, seasonal, preferably local, an abundance of vegetables and salads- mostly cooked lightly, in extra virgin olive oil, not to occult but to enhance the primary elements. Italian cookery is elemental; in other words it provides ingredients which are identifiable and distinguishable from each other; it tends to avoid melting pots; you always know what you are eating. This is especially important in an age of increasing intolerance and allergy. These are Italian keys to good health: quality of food ingredients, quality of treatment, quality of table, quality of time and of convivium. |
