slow food, slow wine, slow conversation at the Roman Villa Silj
Convivium in Latin means a feast or joyous sharing of food.
The slow sharing of fresh food, good conversation and stories is man's oldest
and most cherished ritual, only vaguely threatened, in recent times, by TV dinners
for one!
The Convivium Romanum is an ancient tradition at the Roman Villa Silj. It began
in the second century A.D. in the villa of the old Roman Patrician couple. It
was continued in the thirties, when my uncle Pio Silj, a patron of the arts,
would play host to artists who came to paint, eat, drink and talk about art.
Many of these artists became contemporary leaders in their work and thought.
Today, we continue the patrician tradition, and my uncle Pio's tradition, through
our own slow food and wine, slow conversation and storytelling, and in the sharing
of ideas in a very informal, unstructured way. At Villa Silj you will often find
artists, and musicians mixing with business people, the artistic process and
the organizational and business process coming together.
We select the best seasonal foods inspired by the interests and tastes of our
guests. That might mean a vegetable just ripe from the vegetable garden or news
from the fishmonger that some really fresh clams have come in. From the best
ingredients available, we create a menu which is a journey of discovery and a
surprise. And so you will find the menus below are a mere outline. Since we also
have oriental staff, we also specialize in Indian dishes and also some fusion
cookery where West meets East. But these we always agree with the client beforehand.
We remember that the good name of Italian Convivium rests upon high quality,
fresh, seasonal product, extra virgin olive oil, local wines, the art of doing
things simply, and good, slow, company at table. In addition to which Italian
cookery is elemental; in other words it provides food elements which are distinguishable
from each other and tends to avoid melting pots. You always know what you are
eating. These are keys to good health and good living.

Welcome lunch or dinner. On the day of arrival or on the following day. €uro
19/ person (€uro 10 for children under 10 years): Spaghetti pesto calabrese
(or similar pasta dish) * Polpettone Romano (mixed meats and herbs meat loaf
or similar) + mixed salad * ice cream * half bottle of wine / head + coffee.
Prices of other menus vary from €uro 19 welcome dinner to €uro
25 -35 / person, as follows:
Convivium Terra (of the land)
Antipasti (hors d'oeuvre) * a first dish
(based on ONE of the following: pasta, country soup, polenta, risotto, gnocchi
etc.) * a main course of meat based on ONE of the following (lamb, turkey, veal
etc.) complemented with seasonal vegetables and potatoes or rice * a sweet delicacy (cassata, fruit mousse or pastry) * completed by espresso coffee or cappuccino.
(steak would be extra)
Convivium Vegetarian
Vegetable and cheese antipasti (hors d'oeuvre) * a first dish (based on ONE of
the following: pasta, soup, polenta, risotto, gnocchi etc. without meat or fish
sauces) * a main course based on vegetable and dairy (eg. melanzane (eggplant)
parmigiana, stuffed pepperoni …) * a sweet delicacy (cassata, fruit mousse
or pastry) * completed by espresso coffee or cappuccino. (Vegan variation without
eggs and dairy, also possible).
Convivium MOI (from the Map of Imagination) (min. 8 guests)
A journey of five senses: at least 6 smaller taster courses followed by a sweet delicacy (cassata, fruit mousse or pastry), completed by espresso coffee or cappuccino.
Convivium Slow-Snacks
Plate of pasta plus platter of hams, cheeses, eggs, salami and other Italian
antipasti with fresh baked bread or pizza bread with tea or coffee.
Convivium
barbeque (al fresco in the fruit garden after sunset) Evening barbecue (with
meats and grilled vegetables) and sangria.

WINES
The wines served by us originate from the vineyards of Vecchia Cantina
Montepulciano in Tuscany, one of the great wine producing regions of Italy. Montepulciano
is where the spumante or prosecco wine has been produced since Ancient Roman
times. Don Perignon's original name was Don Perignone, a monk from Montepulciano,
who taught the French how to make champagne !
